  8 Hearty Vegan Meals To Keep You Warm This Winter   Tater Tot Hotdish is a favorite dish of mine. It's a southern American dish that has been popularized by American chef and food creator, Paula Deen. Tater tots are potatoes that have been deep-fried in oil until the texture becomes crisp and crunchy. The potatoes are then combined with an assortment of vegetables and other ingredients, such as onions, carrots, green bell peppers, cabbage, celery root or parsnips for the vegetarian variety and canned tomatoes non-vegetarian version. The mixture creates what resembles a hash brown casserole served over rice or mashed potatoes with cream gravy on top.   The flavors of this dish are hearty without being heavy because it is dairy-free and gluten-free. The original recipe calls for chicken broth, but since I am a vegetarian, I use vegetable broth instead. This is a make-ahead dish that can be frozen and reheated when you are ready to enjoy it.   The Twice-Baked Potato is a
