Tater Tot Hotdish
is a favorite dish of mine. It's a southern American dish that has been
popularized by American chef and food creator, Paula Deen. Tater tots are
potatoes that have been deep-fried in oil until the texture becomes crisp and
crunchy. The potatoes are then combined with an assortment of vegetables and
other ingredients, such as onions, carrots, green bell peppers, cabbage, celery
root or parsnips for the vegetarian variety and canned tomatoes non-vegetarian
version. The mixture creates what resembles a hash brown casserole served over
rice or mashed potatoes with cream gravy on top.
The flavors of
this dish are hearty without being heavy because it is dairy-free and
gluten-free. The original recipe calls for chicken broth, but since I am a vegetarian,
I use vegetable broth instead. This is a make-ahead dish that can be frozen and
reheated when you are ready to enjoy it.
The Twice-Baked
Potato is a potato cooked, peeled and then mashed with a variety of other
ingredients in the mixture. These mashed potatoes are then divided into two
portions, stuffed with various fillings and baked to create a fluffy warm dish.
The Twice-Baked Potatoes contain eggs, butter or margarine but can be made
without dairy products when necessary by substituting them for organic
vegetable cooking spray instead. The sweet potato has made an excellent
replacement for the mashed potatoes when desired. You can add your favorite
ingredients in this dish, such as garlic or bacon bits to dress up the flavors
even more! This dish is perfect for any occasion and guarantees leftovers that
will keep you satisfied until your next meal
This recipe
indulges my love for cheese and broccoli! The casserole includes a combination
of rice and broccoli, topped with a rich dairy-free cheese sauce.
For my vegan cheese sauce, I combine almond milk or soy milk with minced garlic as
well as nutritional yeast. This is then blended until creamy before adding the
rest of the ingredients such as salt, paprika, chili powder and pepper. The
dish is finished off by topping it off with some crushed almonds before baking

cooking time varies depending on the desired texture of the daal curry.
"Roti" refers to Indo-Caribbean yeast breads that are popular in many
countries of the Indian diaspora such as Trinidad, Guyana, Surinam and St.
Vincent and Grenadines where they have been influenced by Hinduism and
Christianity.
